These were a favourite among the confetti team at this shoot – make sure you make enough as they’re so yummy they’ll disappear off the plate quickly!

Ingredients

3 cups Tandaco stuffing mix
2 rashers Bacon, diced
1 Brown onion, diced
1/2 cup Semi dried tomatoes, sliced
1/2 cup Dried apricots, sliced
100 gms melted, Butter
2 cloves Garlic, sliced
1 Egg
1 cup Tasty cheese
Prosciutto

1 cup Plum sauce
1 Cup of water

Method

1. Melt the butter, take off the heat and add all the ingredients into the same pan. Mix until combined, then add one egg and mix again.

2. Make a little ball and wrap inside a thin shaving of prosciutto. Place on the baking tray and cook in 180 degree oven until crisp and golden brown.

3. Combine the plum sauce and water and cook in saucepan until it reduces by half.

4. Serve the balls with a glaze of the plum reduction and garnish with fresh chives.
