As a relatively new mum myself, I’m really only just learning about the true value of Mother’s Day from a mother’s perspective.

I don’t think I’m alone in wanting to spend this day indulging in some real quality time with my children. For me personally I have no interest in receiving a store-bought gift. Bring me breakfast in bed, a lovingly handmade gift, and copious amounts of cuddles and expressions of gratitude for all that I do and I’m one happy mamma …so long as I don’t have to do any cleaning up!

So this Mother’s Day we suggest forgoing any expensive store-bought gifts, and giving something from the heart. Something that Mum will be able to keep and cherish. A delicious breakfast in bed, a good book to read and relax with, and a handwritten card or letter that tells your mum just how much she means to you is all that is needed. If you want to do more you could always clean the house, do the washing and cook dinner. That sounds like my ideal Mother’s Day!

And for the perfect breakfast, we’re sharing our favourite granola recipe with you, from another of our go-to recipe sites, My New Roots.

This recipe makes quite a large batch, but it lasts well and is delicious served with yogurt and fresh fruit. Package it up nicely in a large mason jar and you have an extra gift for mum!

Simple Gourmet Granola

Ingredients

4 cups Rolled Oats (not instant)
1 cup Raw Almonds, chopped
1 1/2 cups Flaked Coconut
1/4 tsp Finely Ground Sea Salt
1/3 cup Liquid Honey (or Maple Syrup, Agave)
4 tbsp Coconut Oil (or Sunflower Oil, Ghee, or Butter)

Method

1. Preheat oven to 175°C

2. In a small saucepan over low-medium heat, whisk oil and honey together.

3. In a large bowl combine oats, almonds, coconut, and sea salt.

4. Pour oil and honey mixture over dry ingredients and stir very well to coat. Place on a baking sheet. Bake for 10 minutes; remove from oven and stir. Place back in oven but remove and stir every 5 minutes or so until the oats are golden brown (approx. 25-30 minutes).

Flavours:

To flavour our granola we added vanilla bean and cinnamon but you could also add cardamom, orange zest, lemon zest cocoa powder or cocoa nibs for a chocolatey twist.

Nut additions:

You can add almost any nut combination you like – pecans, cashews, macadamia nuts, pumpkin seeds, etc.

Dried Fruit (add after baking) additions:

Dates, figs, cranberries, raisins, cherries, goji berries, mulberries, apricots, etc.

Superfoods (add after baking):

bee pollen, cacoa nibs, hemp seeds, flax seeds, chia seeds.
